Legends Diner in Denton rolled out a $50 surcharge if they have to explain why masks are mandatory in the restaurant and $75 if they have to listen to you disagree.
While the surcharge is primarily tongue-in-cheek, it highlights the toll COVID-19 can take on smaller businesses if an outbreak occurs.

There is a noodle shop in San Antonio that is getting vandalized. The owners are getting harassed and threatened. Naturally the local media claims this is all about racism towards the Asian owners.
Which of course it is not. It has everything to do with the fact that they are still hiding behind the mask mandates. They are too afraid to open up their business like our governor suggested.
If these restaurants want to go out of business, they are sure on the right path.

I like to sear it real good in the ninja foodi to get a nice even Maillard reaction on both sides and then air fry it on a wire trivet for maybe 8 minutes to finish it off. It's way easier than grilling and loses less moisture imo. I sear it in the oil that I just used to sauté a pile of sliced onions and mushrooms. Before I cook it, I rub it with a Montreal steak seasoning because I really like the Coriander and of course I let that sucker come up to room temp before I start.
Which reminds me, I'm frying chicken thighs tonight and have to take them out of the fridge
