Roast Your Garlic Upside Down

Roasting garlic is not hard. You cut off the top, drizzle some olive oil on the exposed cloves, and wrap it all up in foil. Easy enough—but roasting it upside down in a ramekin is even easier.

For one, you don’t have to worry about stocking foil or cloves sticking to the foil, which always happens with at least one of mine (usually the biggest, most tantalizing one, because we live in a taunting, cruel world).

Roasting your garlic in a ramekin is, dare I say it, easier than roasting it in foil, because you don’t have to wrap anything. Slice about half an inch off the top of the bulb like you usually would, drizzle a little olive oil in a ramekin, and set the garlic into the oil, cut side down. Roast for the usual amount of time (40 minutes to an hour), then flip the bulb over to reveal beautifully roasted garlic unstuck to any foil. Even better, the oil you used to roast the garlic is now infused with garlicky goodness. Drizzle it on vegetables, dip some bread in it, maybe take a swig.

I know someone who used to eat a garlic sandwich whenever he got a cold. He's butter two slices of bread and layer thin garlic slices over the butter, slap it together and eat it. Then, he'd get into bed and sweat like crazy. He always swore he felt almost 100% the next day. I never tried it but have thought about it.

I remember in the ‘60’s, my mom rubbing raw garlic on us when we had the mumps. I can’t recall if it worked!

We have a gourmet Kroger about 25 miles from here with a specialty bar that sells big, mild, sweet garlic cloves marinated in olive oil. We could make a meal out of them. They also sell marinated mushrooms, sweet cherry peppers, and dolmas as well. A feast fit for a king. And it comes with a king’s price tag, too.

Onions are also great, roasted. Use a little butter.

You got me to thinking about using the air-fryer instead of in the oven. It might be faster.

Better yet. Garlic croissants 🥐!

Simply take a croissant slice it up and take some raw ( yes absolutely Raw garlic none of that pre-peeled crap)

Put the sliced garlic on top of the croissant and put some sliced butter on top of that and put it on broil for two minutes

Just until the garlic loses its razor edge!
