Chipotle Mexican Grill on Monday began offering a cauliflower rice option to attract consumers trying to comply with their New Year’s resolutions.
The rice substitute is made with grilled cauliflower, cilantro, lime and salt and will be available in U.S. and Canadian restaurants for a limited time. The option will cost an additional $2 for tacos, burritos or bowls.
Chipotle started testing the item at select locations in Colorado and Wisconsin this July. The company said that before the test, one-third of new menu requests from customers was for cauliflower rice. The rice substitute has grown popular as more consumers cut grains out of their diet. In the test markets, nearly 1 in 3 customers who chose cauliflower rice was an infrequent or new Chipotle customer.

I like my rice fried, dirty, wild, covered with salsa, with chili, or a hundred other toppings. Otherwise, I hate rice!

Some folks are into it. So long as they don’t get rid of real rice I don’t care.
I say keep it simple stupid.
Do a few things, do them well...
Sonoran dogs, mmmmm. But it’s gotta be the real ones with the bacon wrapped around them. Some places are doing clones without the bacon, no good. As a native Chicagoan that grew up on dogs with everything but ketchup I love em.
Defintly a Tucson thang.
Mexican food in Tucson isn’t nearly as good as in New Mexico. And Tucson has long since gone hard-core liberal stupid. I try hard to avoid it.
But....it was in the 90s when I first experienced rice in burritos. Near Seattle. And the owners got upset when I complained.
Tucson is odd to me, all picadillo and wierd sonora dawgs.
Still, it’s unique.
Go down to Nogales, good tacos there.
I just want to be able to dine in..and sneeze without freaking any out.
Sounds like an interesting option provided they haven’t messed it up by adding sugar to the seasoning or something like that.
Every time I’ve tried Chipotle I’ve had half a bowl of rice (and a few of the toppings) left over. It’s an absolutely absurd amount of food for one meal assuming you’ve got meat, cheese, salsa, and veggies on there as well.
My favorite is a brassica called 'Romanesco."

There is nothing wrong with cauliflower if you want it as a vegetable or flavoring.
But if you like the taste of rice, you are better off getting a quality rice such as genmai (unpolished without the fiber removed).
My wife and I will do a round of Whole30 every now and then for a change of pace and to help cut back on sugar intake. We too use cauliflower rice quite a bit. Cauliflower gnocchi is good too. But yeah, I’ve never had plain cauliflower rice. It’s a best with garlic and other herbs. A little ghee helps too.
I heard that you can substitute cauliflower in place of mashed potatoes, too.
Me too my friend. I get the need for people to go after Vegans, Freegans etc. with their comments but some of us have medical issues which limit our diet. Would be nice to eat something besides a salad.
