Large green sea turtles were put on endangered lists years in Florida...that’s what killed turtle soup in my area...

I’ve never had better turtle soup than what I got at Brennan’s in New Orleans. Served with a float of sherry and a lemon slice.

The rich guys at the country club I worked for used to get a bowl of snapper and a half sandwich for lunch.
Off topic, but a saw a Cinderella movie at 0200 one time that had a snapper...

I never ever saw turtle meat available in markets. I’ve always thought it was a food source in remote urban areas where swamps and ponds are available where locals such as an uncle would harvest them.

I use ground lamb to make the “hamburger helper” version of Stroganoff. It’s very rich, so it tastes great, especially with a fat spoonful of sour cream.
