The study, published in The British Journal of Nutrition, focused on nearly 30 years of data (1991 to 2019) for roughly 9,000 adults in China, where diabetes cases are on the rise. "Over the past few decades China has undergone a substantial nutritional transition that's seen many people move away from a traditional diet comprising grains and vegetables, to a more processed diet that includes greater amounts of meat, snacks and energy-dense food," explained Ming Li, MD, Ph.D, an epidemiologist at the University of South Australia. "Diet is a known and modifiable factor that contributes to the onset Type 2 diabetes, so understanding the range of dietary factors that might impact the growing prevalence of the disease is important."

Different cultures or races have different metabolism. I remember many decades ago there was a fad diet which originated in Japan. Iirc, it was called the Zen Macrobiotic diet. Anyway, it consisted exclusively of rice and tea. The Caucasians who tried it were dropping like flies, healthwise and lifewise. Turned out Asians had an ability to synthesize an amino acid that was missing in the Caucasians who were keeling over.

Remember some years back they were saying DHMO was a top killer in the US? There were even people in front of super markets with petitions to outlaw it. I actually witnessed people signing those petitions. They couldn't explain what is was so I checked it out.
As info came out about DHMO, the stupid busy-bodies stopped their push when they found that DHMO (dihygrogen monoxide) is frigging WATER! Yup, thousands of drownings occur ever year, so it IS a leading cause of death, but not for the reasons they thought.
In extremely poor countries they sometimes feed their babies with DHMO instead of milk because the mothers can't produce enough milk and they can't afford formula or have access to it.
Eggs were a good source of protein for millennia, until eggs yolks were bad (extra cholesterol). Then eggs became okay again until now that they're bad again. I have lost almost all faith in "scientific studies".

Alcohol, coffee, meat, dairy, and now eggs. This year a study says they are all bad for you and next year a study says no problemo.
