They taste like catfish. Only with more bones I found this to be true with the saltwater variety that I had in Holland. I've never had freshwater eels.

Since current Holocene interglacial began at the end of the Pleistocene about 11,700 years ago flora and fauna from both North and Central America has been moving north to reclaim land scrapped clean by the ice sheets. When species move north by whatever mechanism they are not invasive. If these Eco nuts had been there then they would have been spraying RoundUp herbicide on plants that were recolonizing the bare dirt left behind the retreating ice sheets.
More species leads to more robust ecosystems.
