Un-Magical Fruit -- Beans, Beans Which Don't Cause Gas

Beans aren't inherently gassy, it is damaged protein from over-cooking that causes the unintended effects. Minimize cooking damage by most efficiently processing beans. It takes a cheap "corn mill" and a pressure-cooker.

Cracking un-washed beans in a kind of dry grain mill for "meal" not "flour", then washing them after cracking, soaking in hot water for a short time, then pressure cooking. The taste is like potatoes, the most gas-prone person won't experience the unpleasant effects.

The cheapest, steel-plate (vs. stone), "meal" (vs. "flour") mill, that will process whole corn, dried whole hominy (softer than corn), and brown-rice-meal (great for waffles), is Mexican made, especially for corn. A more expensive, easier to use "meal" grain mill is by Kitchen Aid, rated by the "Organic Gardening", Rodale Press as the best machined, best made grain mill.

A great video on buying a higher-end pressure-cooker. European-made, more recent ones, lack a top weight, they have interlocking handles and heavy-duty gaskets. But you can get a cheaper, older American made-one at a thrift store, but you have to have the detachable, therefore, lose-able Weight on top, don't buy without one.

I thought it was due to a particular carbohydrate in beans that humans lack the enzyme to digest. As a result it passes unscathed into the large intestine, where it gets broken down by bacteria who create gas in the process.

This is why anti-gas tablets like Beano work. They supply the missing enzyme so the carb gets broken down before it enters the large intestine, thus no gas.

This is the first I’ve heard of the protein theory.

If one soaks the beans over night, then brings them to a slow simmer for 2mins. THEN let them sit off the heat for an hour before cooking...will remove about 75% if the fart out of them.

It’s all about enzymes.

Same. I’m going to need to see some research before believing this.

More likely, the washing stage after grinding is washing away enough of that carbohydrate to make a difference.

On a related note, a few years ago I stumbled across a bean that doesn’t cause gas. The “Beefy Resilient Grex Bean”, developed by Carol Deppe. It’s not available on a large scale yet, but I’m working on developing a strain that can be machine-harvested. Until then, the only way to get it is to grow your own.

It’s entirely possible that the carb that causes gas is a big contributor to the “beany” flavor. That could be why Beefy Resilient taste so different, and why the article above says the beans taste like potatoes after the recommended treatment process.

Soak dry beans in cool water for 12-24 hours before cooking. Replace water at least twice, rinse thoroughly before cooking. Add a pinch of powdered ginger while cooking. No gas, guaranteed.

Anybody interested in my red beans and rice recipe?

Get an instant pot. An electric pressure cooker that does several things in addition to pressure cooking.

That’s a lot of work to eat beans. Just soaking them overnight is a hassle as far as I’m concerned.

I like the Amish baked beans in my supermarket’s deli section. I’ll buy them when they’re on sale for $2/lg.

Back in the 70’s we became friends with missionaries who had lived in Venezuela and Mexico. They said that adding a couple of tablespoons of vinegar to the soak water would take care of the flatulence issue.
