I like salmon, but I don’t like my meal staring back at me.
The heavier bones would probably make a good broth.
That, plus some Tarragon and Thyme.
Raise your hand if you want the eye in my dish, otherwise
I will de-eye it myself.

Fish head curry was one of my favorite dish’s in Singapore. With everything served on a banana leaf.

I remember reading long ago a description of a banquet somewhere. The eye of the animal served was considered a great delicacy, and if the host offered it to you it was a great insult to turn it down.

Can’t recall where it was, but it may have been somewhere in the Middle East.

I’ve eaten this and it was delicious. My Norwegian Mother in law was a prolific fisherman. She would fillet the meat, and the rest minus the guts went into crab bait, or salmon chowder/stew depending on how much was caught......she would pull the bones out after cooking and save the head for herself. Also instead of smoking, pickling the salmon is awesome, canning works too but more involved than I ever got into.

Simmer it for two or three hours, put it in a blender and you won’t recognize a thing! PS, put garnish on last.
