I’m a mechanical engineer. I do both software and manufacturing trades. The skills needed to machine and implement a working device are every bit as challenging as the software I’ve written.

Most kids don’t know what to do with a shovel. When I hand one to them, they just look at it strangely. I tell them that I removed the USB cord so it’s manual now then proceed to show them how to use it.
He is considering the level of complexity of society more then 300 years ago, and from 300 until recently.
It is a common mistake; what people often do not realize, is people with a lower level of tech had just as complex lives as we do.
A technology built on wood, can be a very complex technology, requiring a lifetime to acquire, especially with no written language.
Lack of tech is not lack of intelligence. In fact, the more tech available, the easier it is for people with lower intelligence to survive.

He didnt say farming wasnt useful or important.
He just demonstrated his ignorance of the technical complexities of modern farming.
The corollary he posited was to NON-farmers, giving these educated city dwellers the elevated status OVER farmers.
Those who choose to reframe his stupidity to qualities of farming consciously misdirect for the purposes of minimizing his obvious ignorance and arrogance.

It’s not just “gray matter”. The Japanese name for farmer is “hayaku sho”, literally 100 names. Meaning a good farmer needs 100 skills.
A modern farmer requires the system knowledge of a mechanic.
But more than that, it’s the diligence to survive a very risky business.
So brains must be supplemented with sufficient balls.
There are more gays and lesbian 3% of the population ( The Democrat favored heroic group ) than there are farmers 1% ( The GOP favored heroic group ).
There are farmers all over the world that would love to get into the closed subsidized US agriculture/food market.
bloomturd would last about a month and at the end of it there would be nothing but dead stock and withered crops as far as the eye can see.
We make heroes out of farmers ( <1% of population and GDP ) and throw manufacturing ( 20+ million workers ) under the bus. The GOP sucks at math.

But, damn, the dude comes across as an arrogant little pr#$k. He certainly was not considering a run for the Presidency or he would have paid someone to write his lines better.
And really? Is the US going to elect a Jewish billionaire from NY. I simply dont see it happening. (Or even a Jewish millionaire....from VT.)
The way I see “Farming” done in central VA happens like this. The “farmer” call Southern States and orders seed. He then calls a contractor to plant the seed. After it grows and is ready to harvest, he calls a crop broker. The crop broker hires another contractor to cut, harvest and haul away the harvest. The “Farmer” never had to leave his house and no one ever left the cab of the tractor, truck or combine. Nobody ever sets food on the ground! What heroes!!!!
