The Weekly Gardening Thread is a weekly gathering of folks that love soil, seeds and plants of all kinds. From complete newbies that are looking to start that first potted plant, to gardeners with some acreage, to Master Gardener level and beyond, we would love to hear from you.

If you have specific question about a plant/problem you are having, please remember to state the Growing Zone where you are located.

This thread is non-political, although you will find that most here are conservative folks. No matter what, you won’t be flamed and the only dumb question is the one that isn’t asked.

It is impossible to hijack the Weekly Gardening Thread. Planting, Harvest to Table Recipes, Preserving, Good Living - there is no telling where it will go and... that is part of the fun and interest. Finally got around to making that orange marmalade. It turned out pretty good I think, maybe a little too thick. The jar in the back on the left was the only one I put jalapenos in (hat tip to JRandomFreeper). I went conservative (chicken) diced them very small and they were total clean of seeds and membranes. Just had some on a half of an English muffin and I like it! The jalapeno flavor does come through and I think complements the orange.

Alleviates the problem of overflowing baskets of harvested garden vegetables.

GARDEN FRITTATA
Ingredients: •tbl ea butter, veg oil •8 eggs, beaten •2 tsp Dijon or coarse ground mustard
•1/2 cup diced green pepper, •1/3 cup white or red onion, diced, • cup mushrooms, thinly sliced
•1/2 cup broccoli, blanched and chopped•2 cups spinach, blanched and well drained
•2 minced gar/cl, •2 tb ea minced parsley and chives, s/p,
•4 ounces cheddar cheese, finely shredded •1/3 cup tomato, seeded and diced

METHOD Heat a 10-12 inch pan over moderate heat •While the pan is heating, whisk eggs/mustard til blended but not frothy
•When pan is hot enough to make a drop of water sizzle, add the butter/oil combination
•When the butter stops foaming, add the peppers, onions and then the mushrooms and saute' for 2 minutes.
•Add broccoli, spinach, garlic and herbs and heat for about one minute. Top w/ cheese.

SERVE w/ scattering of diced tomatoes.

They’re good for using up little leftover bits of food all year, just like pizza.

I just finished slicing frying peppers that are going into the freezer. Next up? More tomatoes into the dehydrator.

Crock Pot Apple Sauce was just plugged in:

I core the apples but leave the peels on; I like the rosy color of the finished product. I’m going to pass it through the food mill anyway, before I return it to the pot and add the sugar and spice.

P.S. Two of the three freezers are now cleaned out and organized.

I put just about anything in frittatas. Spinach, kale(not anymore I hate it now), sweet potatoes, regular potatoes, onion, garlic, leftover meat, cheese, broccoli, etc.

Sometimes I fix them because they’re tasty, sometimes to use up dribs and drabs of leftover items.

They’re good for brekkie, lunch or dinner.

I could live on breakfast foods and soups.

Easy way to use up those just-dug sweet potatoes.
Recipe courtesy of Chef Brian Stapleton of Carolina Crossroads Restaurant, Chapel Hill, NC

Sweet Potato Gnocchi / Mascarpone Cheese Sauce

METHOD Rice 4 warm baked sweet potatoes, one boiled russet potato. Stir in 2 c flour, beaten egg, pinch cinn/nutmeg, s/p;
mix well. Pipe batches w/ ½" tip into boiling water, snip w/ kitchen shears at ½" intervals. Done when they float to surface.
Drain; keep warm. Repeat w/ rest.

SAUCE heat 4 minced shallots, gar/cl both, tb sugar, cup h/cream, 1/2 cup herb, veg or chix stock.
Add 4 oz mascarpone, bunch fine-chp sage. S/P to taste.

ASSEMBLY Combine with Sauce in server. SERVE garnished with sage leaves.

Yellow squash still going strong, but that’s about it.

The apples are plentiful; and the peach tree is loaded beyond reason. However, I have my doubts about the peaches, as some are already going from green, straight to brown. Might get some elderberries, if the birds let them ripen.

Dug the last of the carrots & beets today; will get the potatoes (few as they are), the onions, and garlic next weekend.

So glad to have the garden tractor back up & running. The replacement engine is doing its job just fine. Learned a lot from the project that I hope I never have to apply. LOL

And the scrap heap groweth. The worn out Troy that I can’t get transmission parts for, minus the Kohler engine, which I used to replace the blown up Tecumseh that came on the new Troy; said Tecumseh; the blown 2004 Kohler out of the garden tractor; the clutchless, beat up 65 VW; the stove-in galvanized water tank; the worn out 30 gallon DeVilbiss air compressor; several small, worn out irritation pumps; 2 water heaters that don’t; a washer that doesn’t; and an old Servel refrigerator that can’t; lots of other odds & ends. If the garden grew as well, we’d have bumper crops all around.

Next weekend, a Realtor is coming out to discuss listing our 1/4 section to the east of the one we’re living on. If we get a decent price for it, I can give up my day job, and have the time to get the garden back in shape, the way it used to be.

You have been a busy bee! No applesauce this year here, still have 4 or 5 pints leftover from 2 years ago when I did a whole bunch. I like to put a big spoonful in my oatmeal, along with a few raisins, some pecan chips and a little brown sugar. You must have wound up with a lot of rain.
