Monthly Cooking Thread - April 2019

Miss M's recipe reminded me I had this Super Yummy Raspberry Cheesecake Bars recipe.
Won the "best bar bakeoff." Store covered in fridge. Can swap canned cherry or strawberry fillings.

Raspberry Cheesecake Bars / makes 24

ING lb 1.5 oz pouch Betty Crocker Sugar Cookie Mix 1/2 cup firm butter 2-8 oz pkg
cream cheese 1/2 cup sugar; 2 tb flour, tsp vanilla, an egg, 21 oz can Raspberry Pie Filling.

METHOD To sugar cookie mix, cut in butter til crumbly and coarse. Set aside 1 1/2 cups for topping.
Press crumbs into sprayed 13x9 pan bottom. Bake 50 deg 10 min; do not overbake.

Spread cream cheese mix evenly over crust. Spoon on raspberry filling evenly. Sprinkle unbaked crumbs over.
Bake light golden 35-40 min. Cool 30 min on counter; chill 2 hours.

SERVE cut into bars.

FILLING Put softened cream cheese, sugar, flour, vanilla, and egg in a large bowl. Elec/ mixer smooth.

Dumb question about Lent: why is it so difficult to skip meat only one night of the week? Could you have meat at lunch on Friday? For brunch on Saturday? It doesn’t seem like a huge hardship. Whereas we Jews have to go 8.5 days without any grains or processed carbs except potatoes. I do understand that individuals can give up more personal desired foods for Lent too, so that makes it harder. But fish or no meat on one meal in the week seems like you guys got off easy! ;)

It seems bluefish do not choose to hang out in California waters. That fisherpeople say the climate would be ideal but yet there are not here.

They may be smarter than us humans.

Capers are like tiny pickles. Not sweet. They aren’t bitter, though, either. They give off a briny tang in dishes. Try something with a few in it. They are amazing on smoked salmon and cream cheese.

Briny tang is a good way to describe caper taste.

I love them, and once I had them in potato salad. Now I would never think of potato salad without them.

Yes, that is capers. No one would sit down to a plate of them, but once they have subtly adorned a dish, you don’t want it without them.

Oh yes! On the rare occasions I make a smoked salmon sandwich I always put on capers. “Bring tang” is a perfect description.

Something tropical. Passion Fruit Mousse. Easiest recipe produces a creamy and delicious
out-of-this-world mousse. CHEF TIP use pkg Goya pulp; or fresh passion fruit puree, not juice.

Easy Passion Fruit Mousse

METHOD Blender/low 30 sec cup ea h/cream, sweet/cond/milk, 1/2 c frozen passion fruit puree.
Chill in server or dessert dishes 30 min. SERVE w/ a garnish of fresh berries.
