Reminds me of hot dog buns in New England.
Even like Pepperidge Farms in the store.
Sliced sagitally (midline, lengthwise, top, partially downward, straight down).
As opposed to the transverse, lateral, lengthwise partial cut of hot dog buns in the Real World.
When I first saw it, I was all, Whats up with this?
It turns out that they use the buns for lobster rolls, not just for hot dogs. With a hot dog, the NE buns hold the dog in an upward-pointing cradle, not hanging out the side.
Maybe they are on to something...

But you do lose the texture of the outside and in the case of “everything” bagels, most of the seasoning.
But if you are cutting down on carb intake, maybe it paces you through it differently.
Wonder what it’s like dipping them in a dish of olive oil.
