if your looking for burdock or similar - there is a Japanese version that can commonly be found in asian food stores, Whole Foods, Mustard Seed, and Trader Joes carries it all the time. In Japan they call it Gobo. My wife uses it a lot in various ways. cross cut rounds, long thin slices. raw in a salad, stir fry, tempura fried. Very versatile.
I like burdock root, called gobo in Hawaii as Japanese eat it. Not a main dish but added to stuff; never found it bitter.
I use the powdered root in herb formulas.
