In reality, the cowboy culture embraced anyone who was willing to work hard: white, black (from Buffalo Soldiers to freed slaves), Mexican nationals, Chinese, Protestant, Catholic, and even Jews (think Levi Strauss, and yes, there were plenty of Jewish cowboys — one even died in the Alamo)

Next case ...
Last time I was in Montana, I learned that half the ranch hands today are women as the pay is low and a lot of women choose the job because they love the lifestyle. When I called one a "cowgirl," I was quickly corrected and told that even the girls preferred to be called "cowboys".
