With conventional forces - Taiwan wouldn't stand a chance, but if they are willing to go all-in and threaten the Three Gorges Dam then China has the choice of backing down or calling Taiwan's bluff and possibly losing pretty much everything downstream of the dam - and that is a lot of stuff.
My guess... the average Taiwanese citizen would rather reunify with the mainland than put their pleasant lifestyle at risk.

You my friend do not know the free Taiwanese. They hate communism and communist China.
They will fight to the death rather than be subjugated and permanently enslaved to communist China.
