Monthly Cooking Thread - May 2018

We’ve had a lot of posts about the Instant Pot over the past few months, and many of us have marveled at how well it cooks meats; but you can do a lot more with it than that. Cheesecake is something that does well in the Instant Pot, and there are recipes all over the Web for various versions. Here is the recipe for Raspberry Cheesecake with an Oreo crumb crust, from the Instant Pot website -

You will need to find a 7-inch springform pan to fit into the 5, 6, or 8 quart Instant Pot. There's currently one available on Amazon for about $12 – but I’m scouting my thrift store first.

One thing that people have found frustrating about the Instant Pot is that many recipes for it don't include in the timing how long it takes to get up to pressure; and they find that the Instant Pot isn't as 'instant' as they had thought. But when it comes to something like Cheesecake - or pulled pork or a roast - the Instant Pot really does cut down the cooking time. It certainly won't make every dish come out its best, but can save a lot of time with certain recipes.

I think I’ve mentioned several times how much I like the hot sauce (particularly the ‘Fire’ version) at Taco Bell, and that I've wished that they would bottle it. Well, they do! and have apparently been doing so for several years. My husband happened to find a bottle of Diablo in the local ethnic store recently, and I was in heaven; but they also bottle and sell the Mild, Hot, Fire and Verde sauces. If you can’t find it at your local grocery, Walmart, or Target, this, also, is available on Amazon.

(I don’t know what it is about it that I like so much; it just seems to have a clear, not-at-all-sweet taste that I like. I haven’t found any other bottled hot sauce that I like as much, and now I don’t have to shame myself by sneaking a zillion packets into my bag at the eatery ;-)

The National Cornbread Festival is taking place this coming weekend in South Pittsburg, Tennessee, and one of the sponsors is Lodge, of cast-iron fame. Their newsletter this week included a recipe for ‘Upside Down Peach Corn Bread’, which they make in their cast-iron mini cake pan; but I think you could do this as one big cake in a skillet, as many of us do Pineapple Upside-Down Cake:

As I understand it, the Commonwealth of 53 Nations were once under British rule but still have trade policies.......some big some small, many poor countries.

The Brits use the word commonwealth to mean community....here in the US some of our early states are commonwealths...like Virginia.

Yes, but I wondered if she had all of them, or only the Realms, where Elizabeth II is head of state.

(I think I remember Diana having some sort of national symbology incorporated into her dress, too.)

One report named the flora used from different countries used on Meghan’s veil......the named countries appear to the the 53 that form the Commonwealth.

Fergie’s embroidery on her gown and train used bees and thistles from family crests and anchors and waves in honor of her husband’s naval career.

Easy, cheesy, makes lots .....and French. What could be better?

CHEESY FRENCH PINWHEELS

ING 2 Sheets defrosted Puff Pastry 1/2 Cup Country Dijon Whole Grain Mustard tbl minced Fresh Rosemary
1/2 lb Italian Salami MUST BE Very Thinly Sliced 3 Cups shredded Jack Cheese 2 Large Eggs Beaten to Blend

METHOD Gently unfold one pastry sheet on lightly floured surface. Flatten creases w/ lightly floured rolling pin.
Spread 1/2 the mustard over evenly, leaving 1/2" border. Sprinkle 1/2 the rosemary over evenly.
Now overlap very thin-sliced salami slices over. Sprinkle w/ 1/2 the cheese. Brush plain border with beaten egg.
Roll up jellyroll fashion, pressing to seal seam.

Repeat with rest ing. Cut crosswise logs into 1/2" thick rounds. Set on 2 parchmented sheetpans, spacing inch apart.
Brush tops w/ beaten egg. Bake golden 400 deg 18-20 min. Serve warm.

Named the most memorable royal wedding dress of all time. Some said "too much dress, not enough princess."

WIKI---The woven silk taffeta was mfg by Stephen Walters of Suffolk.The designers consulted Maureen Baker, who had made the wedding dress of Princess Anne, during their construction of the gown.One observer wrote "the dress was a crinoline, a symbol of sexuality and grandiosity, a meringue embroidered with pearls and sequins, its bodice frilled with lace".

The gown was decorated with hand embroidery, sequins, and 10,000 pearls. The lace used to trim it was antique hand-made Carrickmacross lace which had belonged to Queen Mary. In contrast, the wedding dress of Kate Middleton, for her marriage to Prince William, Diana's eldest son, incorporated motifs cut from machine-made lace appliquéd to silk net.

The twenty-five-foot train posed problems. Diana had to rehearse walking w/ the cathedral-length train. According to writer Andrew Morton, in Diana: Her True Story, the gown's designers realized too late that they had forgotten to allow for the train's length in relation to the size of the glass coach Diana and her father rode in to the ceremony. They found it difficult to fit inside the glass coach, and the train was badly crushed despite Diana's efforts. This accounted for the visible wrinkles in the wedding gown when she arrived at the cathedral.

Diana also had a spare wedding dress, which would have acted as a stand-in if the dress' design was revealed before her big day.

At the time, it seemed a fabulous dress - it was a sort of extravagant era; but now it seems too much. I much prefer Catherine’s and Meghan’s dresses.

I think the dresses perfectly reflected the wearers.

Diana’s was certainly a dream of a dress, only a storybook princess could wear.

Kate’s dress was demure as she is.

Meghan chose correctly-——plain but elegant-——since she had been married and divorced.

A refreshing lemon cream dessert........ plus chocolate.

CHOCOLATE CUPS: line paper muffin cups with melted chocolate. Chill firm

LEMON CREAM ING 6 oz pkg lemon gelatin, cup boiling water
2 cup vanilla ice cream, softened, 3 cup thawed cool-whip.

METHOD completely dissolve gelatin in boiling water. Elec/mixer/whip on med,
gradually adding softened ice cream; beat smooth at high speed.
On low speed, quickly blend in cool-whip.

ASSEMBLY Spoon cream into chocolate cups. Can do to here and freeze

SERVE a bit thawed, garnished w/ lemon zest threads.

It’s like you wrote this raspberry tiramisu recipe for me! No caffeine (like with regular tiramisu) and Sprouts has these huge packages of fresh organic raspberries right now. Yesssss. This is going to happen.

I too noticed (keep noticing as mom watches the royal wedding almost daily, 9x so far) how really unattractive Oprah’s dress looked on her. A clingy t shirt style which did nothing for her chest. She has so much money. Surely someone could have picked out a generous, pretty woven spring dress.
