South Korea's trade deficit in kimchi, its proud traditional side dish of fermented cabbage, reached an all-time high last year as low-priced Chinese imports flooded the market, statistics showed Wednesday (Jan 17).
The spicy foodstuff is emblematic of Korean cuisine and accompanies almost every meal served in the country, whatever its culinary origins, with kimchi-making still an important annual ritual for many families.
But the commercial market has been deluged by Chinese producers in recent years, resulting in what has been dubbed the "kimchi deficit".

I love the stuff!
Having tried it - and liked it - I honestly believe Koreans are literally addicted to the stuff. Spicy enough to induce an endorphin rush, making one happy.
I do too. One jar I had called it ‘refreshing’. I like the way it bubbles up when you open a new jar—like it’s alive.
We ate a lot of it when we were in Korea for a couple weeks this spring. Yumee!
In the wintertime we use kimchi instead of a furnace to keep warm.
I bought some in a pouch and it seemed gross - I think I’ll stick with glass jars. I try to eat kimchi or sauerkraut since they say it’s healthy.
Seoul food.
People who like Kimchi are like people who saw a yellow dress instead of a blue dress.
Just plain wrong.
My Korean Sister-in-law once served me steamed rice, topped with kim-chee and a poached egg on top. It was surprisingly delicious.
Sounds wonderful to me.

Despite the odd topic, the Straits Times is one of the last great newspapers for real journalism.
There's one small restaurant in the local area that has some good Kimchi and I hit it about 4 times a year.
for decades Japan enslaved Korea.
The Japanese were horrible to the Koreans and forced them to eat spoiled rotten food. They put extreme hot sauces in the food as a form of torture.
After decades of eating this it became a staple of their diet.
