The researchers found that white button mushrooms, the most commonly consumed kind in the U.S., have about 12 times more of the antioxidant than wheat germ and 4 times more than chicken liver, the previous top-rated ergothioneine sources based on available data. Until the Penn State researchers developed their testing approach, known asan assay, there was no method employing the most sensitive modern instrumentation and analytical techniques to quantify the amount of ergothioneine in fungi. The researchers say that their assay can be used for other plants, too, not just mushrooms.

I must point out that this *unbiased* study was published by a state university in a state that is one of the world’s leading producers of mushrooms.
I’m a mushroom adict. Coincidentally, most people think I’m in my 40’s even though I’m 64. The older I get, the more embarrassing it gets.
Try this sometime:
Make yourself a hamburger, in whatever style you usually do.
BUT
Instead of a bun, use those GIANT Mushrooms, like Shiitake or others......................

Haven't checked those little cans of sliced mushrooms in a while, but are they still grown in PA?

Doesn't sway me one way or the other. I'm pro edible mushrooms.
I don’t eat wild mushrooms..................but there was this time back in the 70’s in a cow pasture..................
I didn’t know PA was a big Mushroom state.................
I saw them at Woodstock..............haven’t changed a bit...............
