The Muslim prohibition against the use of pork should not be a religious conviction. When the restriction was made, it was an effort to conserve water in the arid climate where pigs were being raised. Pigs were found to require more water than other animals raised for protein. It was a practical matter to discourage their use. This restriction is irrelevant and unnecessary today.
Pigs were not restricted because of their transmission of Trichinosis. The science necessary to understand the connection of the Trichinella spiralis to its effects on the body was not invented.
