With everything going on in the world and politics. North Korea, NFL issues, congressional faceplants, with all that, consider this:
we still have Velveeta and Rotel. plus a nice fresh bag of chips.

Velveeta actually costs more than a basic cheddar type cheese...I am wondering if I can use those cheeses instead of velveeta

I have samosas and mint chutney. Rotel velveeta and chips sound good too but wouldnt trade you. My snack food wins. ;-)

FWIW, last time I heard, because it was in a carcinogen study, it contributed to the concept of "anti-carcinogens" when it was used on charbroiled burgers, and the carcinogen count went down in the sample.

I do use Velveeta—it stores on shelf which is useful in winter in midwest.
Interesting how it is now more expensive than some of the basic gooking cheeses I can buy.

My mom made a relish or chow chow like that years ago. Was smart enough to wear gloves but the fumes were so strong the whole house stunk for days and I remember my eyes burning and watering for at least a week.

Never mind, I finally cracked the googleness.
Most people don’t know about those chipotle chokes. I have a recipe for you to use on pork ribs or pork roasts. You’ll never eat them without it again.
Chipotle cream sauce
In a small frying pan on medium
Melt 2 tbs butter
Add 2 chipotle peppers from the can. 3 if you want it hotter
As they’re cooking mash them into the butter with a fork
Add about 3/4 cup whipping cream turn on low and cook til it starts getting a little thick
I serve it in the side to dip the pork in
She learned how to make Enchiladas when we lived in NM. One of her close friends showed her how.
Amazingly simple. But great food.
There is no Mexican food like that in NM and CO. Best in the world. TexMex is not even close. Mex food in Mexico is bland stuff generally. Same in much of Central America.
I had a friend who went on mission trips to Honduras. He worked in IT when I ran the catalog/printing department where we both worked. He came to me before one of those trips and had me fake some labels for Canned Salsa to take on the trip. He found a UPC code for one in the store and brought me the graphics, I made the labels on adhesive back stickers with the color laser printer. It looked professional It sailed right through, smile.

Sounds great. There are so many good cooks in CO and NM.
I miss that.
I traveled the West and Midwest for 30+ years (outside sales & support). Saw lots of beautiful country. Met many great people. Down to earth private business owners. I miss the people, not the travel.
I have a sick friend in the marina so made enchiladas yesterday for her. This morning I threw leftover enchiladas in the microwave and then fried 2 eggs for the top of them. Lol
I do the same thing with chile verde.
