I either read or dreamed that I read in one of the SHTF preparedness manuals that one of the religious orders usually has a canning facility set up in their halls so members can get ready for the future and save via economy of scale. Was that the Jehova's Witnesses? Can nonbelievers use their facility?

You better evacuate to a place where there are sidewalks or can openers or you aren’t going to make it.
I have at least four can openers and am adept at using a knife.

Prove that the inca were freeze drying....since it requires vacuum and extreme cold.
Freeze drying set ups cost a bunch of money. Since this person couldn’t afford much in e way of canning supplies they sure couldn’t afford a freeze dry machine.

Wrong. Jars and bands can be reused. The lids can’t be.

Canning does not take much expense. The biggest expense is the jars. The pot and book and other utensils are not that expensive.
And once you own them, they are yours forever.
A pressure canner, however, is a different matter but I use mine a lot so it’s been worth it. You absolutely have to pressure can veggies and meats. Fruits can be hot water bath canned. I have lots of cans of turkey soup from Thanksgiving dinners canned up.

And for pectin, this stuff is THE BEST.
You can make triple batches. I use 12 C fruit and 4 C sugar and it fills 7 pints, enough for one canner load.
It's very a versatile pectin and much easier to use than Certo or Sure Jell.

I bought over a thousand canning jars at yard sales for an average of $ 0.11 (eleven cents ) each. I got that many bands too.
Freezing works well for nuts and spices.
Especially if you put them in canning jars. No freezer burn.
As for spices, many of the common spices are perennials. I have in my garden here in NY thyme, lemon thyme, oregano, sage, chives. I by a rosemary plant every year. Basil is ridiculously easy to grow. I tried marjoram but don’t know yet if it’s cold hardy enough for NY winters.
I also grow a crop of garlic every year which is resistant to everything and always does well.
The kind I like best is Great Northern. It produces huge bulbs and it keeps very well.

Don’t forget salt.
For all the suggestions I see about essentials, salt is going to be critical for survival and may not be readily available in many locations.
I store my salt in canning jars (without processing) just to keep it from caking up.
You could always pick up a hunk of concrete from some construction project or demolition.
Maybe you can get your son to freeze-dry you some water...

Pressure canners can be found at yard sales and thrift store or ask around. I have two yard sale bought big ones and one small inherited pressure canners. Have them tested at the home extension office. FYI, new gaskets can be hard to find. Replacement gaskets made in Japan may not fit properly so do a search for comments about your model.
