Weekly Cooking (and related issues) Thread

Posted on 07/25/2017 3:33:39 PM PDT by Jamestown1630

I’m posting this Tomato Soup recipe from last year again, because even though it’s a hot soup, which we may not want in Summer, and the recipe uses canned tomatoes, it’s a great use for fresh tomatoes if you have a ‘bumper crop’. It’s also a wonderful starter for any season: light and bright – not a heavy creamy soup; and you might like it as a lighter change for the soup course even at Thanksgiving or Christmas.

The original recipe comes from 'The Chesapeake Bay Cookbook', by John Shields (highly recommended!) but I've goofed-around with it a bit. I leave out the sugar, because I like a really tart tomato soup - and I usually throw in a lot of dried basil, instead of using thyme or fresh basil. (Now that I’ve got my year-round basil via Aerogarden, that may change.)

Making this is a bit of work, and you do need a food mill to do it properly; but it’s worth it - and it freezes well.

Deal Island Summer Tomato Soup

1 C. Butter, or Olive Oil (I usually use half butter, half oil)

3 green bell peppers, diced

2 C. diced onions

2 C. diced Celery

2 T. chopped Garlic (opt.)

3 C. water

4 lbs. Tomatoes, Peeled and Cored; or Canned (I usually use a big ol' can of tomatoes from Costco.)

4 tsps. Sugar (or less, or opt.)

2 tsps. Salt

2 Bay leaves

1 tsp. dried thyme, or 6 fresh basil leaves, chopped

1/4 tsp. ground Nutmeg

Freshly ground pepper

Garlic Croutons

Melt butter or heat oil in soup pot. Add onions, celery, bell peppers and garlic. Cook, stirring, 10 minutes.

Add water, bring to boil, then simmer 30 to 40 minutes.

Add the tomatoes, sugar (if used), salt, bay leaves, thyme and nutmeg. Simmer 45 minutes.

Pass soup through food mill. Return to pot and reheat. Adjust seasonings. Serve topped with freshly ground pepper and croutons.

(We usually double this recipe.)

Lately, while roaming around on YouTube, I’ve often seen recipes for ‘7-Up Biscuits’. I had never heard of this, and made the mistake of using a recipe that was NOT a good one last weekend. The result was a mixed success – the batter came out so runny that I had to just pour it into an oblong pan and bake it like Corn Bread. It was very tasty – but not biscuits ;-)

I did retroactive research, and found that my recipe used half as much of the biscuit mix as necessary. I learned my lesson! and my wild birds are getting a special treat this week ;-)

Here, from 'Angie's Southern Kitchen', is a recipe with the right proportions:

http://www.angiessouthernkitchen.com/2012/06/7-up-biscuits/

Earlier this week, Freeper Covenantor showed us a wonderful pie using apple roses; and whimsically suggested Bacon Roses, for which we actually found a recipe. And while I don’t think that ‘bacon roses’ are something I’d actually make, it reminded me of something I used to make for kids’ stockings at Christmas: Dollar Bill Roses:

'Thrifty Fun' has the instructions for crafting them:

The tomato soup sounds delicious. Is it really a full cup of butter/ oil?

My husband and I watch every sappy Christmas movie that comes out - but we do wait at least until November :-)

One that we really love and want to buy is almost never broadcast, and you can almost never find it on Amazon - it’s always out of stock:

I don’t know if this would change the flavor because I love the delicious flavor of the seeds, but what if you flash boiled the tomatoes, then peeled and seeded them first? And just used the “meaty part” which you could still strain for a bit before putting them in the pie.

And what if you put a layer of Parmesan on the bottom crust like sawdust before you layered in the chopped tomatoes?

Sounds delish. I’m not afraid of good fats. But I just wanted to be sure!

Sounds good. I was very sad during the December season in 2015 and those movies made me feel good when nothing else did.

I think very highly of Richard Thomas (John Boy) because once when I was alone at the baggage claim with a squirming toddler in my arms, he saw me struggling to get my luggage and came over to help me. He got all of my luggage and put it in a cart and made sure I was ok and then disappeared with his wife. No one seemed to recognize him and nobody really was paying attention to his good deed. It’s what you do when no one is watching that makes you a great person.

Thanks! I’ll try the flash boiling method. It shouldn’t affect the flavor-it’s not exactly a “Sally Fallon/Nourishing Traditions” friendly recipe but it’s so good. Mayo mixed with cheese, layered with tomatoes and jalepenos in a rich, buttery crust.

It’s very nice when you find a famous actor - or any other performer/artist - who never succumbed to the ‘persona’ and remained a real person :-)

I should be able to get two batches of salsa & hopefully have enough for one batch of just plain canned tomatoes. If I don’t have enough to go through the canning process, I’ll just freeze them. It’s rewarding when the garden starts producing, but it makes for some very busy days!

The tomato soup recipe looks really good - I need a food mill for some other recipes too & this gives me one more excuse to buy one.

Buy one that has a solid handle, not one of those with wire handles. Ours has the wire handle and it gets very tiring to use, and hurts your hand. We’ve always had to use a pot holder with it.

Other things being equal, we’ve found the ones with handles like this to be preferable:

I went to a local small store once and someone had left a whole grocery cart full of zucchini just outside the door with a sign marked FREE

Very interesting. I like your choice of words - appalling mauve color, etc, lol.

Unfortunately I’ll have tons of San Marzanos - you don’t think they’d work with this then ;(

Completely unrelated to the thread but I saw your screen name and it occurred to me that you were thinking of packing a picnic and going up on the Blue Ridge Parkway for the rhododendron and flame azalea bloom, did you make it? If so how was it? I’ve always thought it was a beautiful time of year up there, not nearly as crowded as fall color, so long as you manage to avoid rain or a thunderstorm. Thunderstorms and mountain tops don’t mix, not for people they don’t.

Coincidentally, I’ve been dreaming about tomato soup. Someone had posted on last year that happened to include a bunch of herbs and spices which happened to be included in 3 different flavored cans of tomatoes in the pantry. Dumped them all into a pot and yum!

Sadly, I’ve had to give up the garden.

Yuck, I don’t know what they did to Bisquick but that stuff is waaaaaaaaaaaaaay too salty. Adding half again as much flour to the mix it was still disgusting. Ended up throwing the last box out and I do NOT throw food out.
