We recently had a request for a vegetable salad thread. One of my favorites is Panzanella, or Tuscan Bread Salad. A search will bring up many variations, and a lot of them use only tomatoes, cukes, and onion. I like to make it with those things; but also add some chopped Giardiniera (you can find it jarred in the grocery store) fresh red and green peppers, capers - and sometimes chopped pepperoni or salami. There are great salad recipes here. I have made all of them and added other grilled veges, when the garden is flourishing. I love this chef. His vegetable combinations are always inspiring.

Roasted veggie salad recipe: I love you and it is legal now to marry you. Too bad I don’t want to get married again, hate to break your heart. LOL!
But seriously. I am STILL on my roasted vegetable kick. No sign of it fading. And I’ve made sure at least 2x a week to include beets or golden beets because now I have high blood pressure and I am taking my BP twice a day now, and I don’t - won’t - take BP meds. Beets are a BP lowering food. (Anyone have any success stories about naturally lowering BP, please share.) That salad looks so perfect for me! And I like the part in the description where the writer says you will get hurt if you make her share.
I like feta and I can’t eat bleu either. But some feta is even too strong for me. Another great one in salads but milder than feta is queso fresca or however it is spelled. In the deli section of stores here, a Mexican cheese that crumbles like feta.

I see that in the Hispanic grocery. Does it taste like feta at all? I’ve somehow always thought that it would be very bland.

Mmm, caprese. We also put a drizzle of rice wine vinegar on (not seasoned).
It’s bufalo mozzarella so it kinda melts in your mouth.
Also on my bucket list. When my mom went, the time capsule actor asked her where she was from, and when she answered, California, he asked her why she was not speaking Spanish. He was in historical character, but these days he didn’t have to be.
Exactly. I want to make a lot of dinners this summer like that. Bowls of veggies with some protein in.
My dad LOVED this. If they make a vegetarian one at a Thai restaurant I shall order it in his memory.
And if you buy real pickles (not with vinegar but fermented with only salt, Bubbes is one brand sold in jars in the refrigerated deli section), save the water and take a tsp to counteract nausea. Or after you ate something you fear wasn’t fresh. Or just need some probiotics.

I don’t have any salad recipes to share. Can’t think of anything. So I will just say thanks for all the wonderful ideas. And I do recommend hitting your farmers markets or good grocery stores, and paying more attention to those cheap root and other cheap veggies. Take some home, and slice and roast them at 400*with olive oil and sea salt. How can anything that good be healthy?? But it can.
*check after 20 mins but most need 30, some more. Wait til they are starting to blacken at the tips.
It is very bland; if you like bleu, stick with bleu. But if you want to give it a try, get one for taco night. That way, it will be sprinkled over a spicy taco and you might love it that way.
And I love fondue, raclette, etc.
