We recently had a request for a vegetable salad thread. One of my favorites is Panzanella, or Tuscan Bread Salad. A search will bring up many variations, and a lot of them use only tomatoes, cukes, and onion. I like to make it with those things; but also add some chopped Giardiniera (you can find it jarred in the grocery store) fresh red and green peppers, capers - and sometimes chopped pepperoni or salami. Chef John of Food Wishes has a technique for making sure your bread doesnt go all soggy:

Williamsburg is before Jamestown, on the bucket list - never been there either, was always too rushed to get to the Outer Banks, to stop!
Salad is always best with meat.

That looks so delicious! A salad is not a salad w/out bread/ croutons of some kind.
Have very mixed feelings about that. On the one hand, they do seem to become entrenched and self-serving. On the other, our system guarantees us the right to vote for whom we choose and believe would best serve us.

Sometimes, salad also needs some protein - salad is often my whole meal, and when it is I like a little bacon, or pepperoni, some cheese or chopped, boiled egg in it; maybe a little chicken or tuna salad. Great ‘bowl’ food.
I don’t think I’ve ever had that before. I’ll bet my parents have though.
I grew up with these things but only the old timers still celebrate these things.
