Back when I worked there I had a couple of coworkers that did that. It’s actually pretty good. Salty and sweet go well together, as any fan of salted caramel knows.

Anyone who grew up on the left coast and is old enough to remember grilling Abalone steaks for lunch right there on the dive boat off Catalina island should try dipping french fries in vanilla ice cream.
And anyone who has never had Abalone should try it, too - to find out what Abalone tastes like.

I have been doing a variation of that for over 5 decades:
Soft vanilla ice cream using potato chips as spoons.
Tastes better than it sounds — the sweet and salty.
