I’m busy and lazy this week, and haven’t cooked anything new; but I thought we’d celebrate CRAB!

I can handle escargot and actually like conch but I don’t like crab
My parents were both Baltimoreans, born & raised. My mother made crab cakes, but she was a ‘cook by feel’ sort & never wrote down the recipe. Learned that from her mother. Crab cakes are certainly a delicacy! Now that I’m here on the left coast we sometimes get Dungeness crabs, but usually eat them plain. Yum! In fact, my mother got a couple from our local grocer & complained most bitterly that they’d cleaned them & removed ‘the mustard’.
I have a quick, easy and scrumptious recipe for crab dip. You take an 8 oz. block of cream cheese and add one stick of butter in a casserole dish and melt them in the microwave or on stovetop. Stir to combine well. Gently stir in 1 pound of lump crab, the juice of one lemon and some freshly cracked black pepper. Serve warm with pita toasts or crackers. Yummy!
We used to go to a restaurant in Mt Pleasant SC called The Trawler. Mt Pleasant is across the Cooper River from Charleston. My family loved their delicious crab dip!! We always serve it on Christmas Eve and have had it at christenings. Excited at seeing it at one christening, my grown children closed their eyes and sighed at first bite. One of them said “Oh a taste of childhood!” and the priest, who had just sampled it, commented he wished he’d had their childhood. :) Here’s the recipe.

Away in Singapore eating great chili crab dishes. Love the food here, esp. The seafood.
Phyllis Stokes has a you tube recipe for salmon cakes made exactly like crab cakes for a whole lot less. I have made them several times an they were really good. She calls for a can of pink salmon for $2.50. You do need to clean the fish well but my dog fully approves of the detritus.
