It is absolutely the carbs rather than the fat that will kill you.
Being out west I get ground bison. 4 ounces with small cubes of butter pressed into it to keep it from drying out. Cook at 400 degrees on a griddle plate grill and it’s crusty outside, and juicy inside. Very lean. Toast the buns face down on the griddle, cook some green chile, add cheese and you’re good to go.
I’ve never had bison, but I’ve heard that it is very good. I like the idea of having it cooked in butter with green chili peppers and cheese.

Sometimes Costco has ground bison and it's pretty good. The butter keeps it from drying out, it's very lean (not as much as elk though). Not sure if you can find actual NM green chile, but I think some is exported in cans or pouches. Here it's a fall tradition to get a sack or bushel roasted.
I saved that and will try it. I don;t know what else is in the horsey sauce, but it’s a favorite.
I am making a tour of the cabernets these days, a glass or two about 5 nights a week. Enjoying it immensely. I have tried some of the dark chocolate and liked it. Perhaps I will pick up a bar?

For comparison, your basic Hershey milk chocolate bar is only 11% cacao and even their "dark chocolate" bar is 45% cacao.
A serious dark chocolate bar starts at 65% cacao and at 85% or better, you are in the big leagues.

Kimchee is one of those oriental foods that service members sample either while stationed in those countries or in places like Cali where there is a large oriental population.It is basically fermented vegetables-usually napa cabbage-with hot peppers, onion, etc. A lot of people like it, but I can’t get past the rotten smell...
