Lindt 90%, Green & Black 85% and Endangered Species 88% are the brands I usually get. I usually pick up what's on sale so long as it's at least 85%.

For comparison, your basic Hershey milk chocolate bar is only 11% cacao and even their "dark chocolate" bar is 45% cacao.

A serious dark chocolate bar starts at 65% cacao and at 85% or better, you are in the big leagues.
