I loves me some grilled cheese sammich. My favorite variety is monterey jack cheese and sliced mushrooms. Keep the pan down low so the cheese melts and cooks the mushrooms just enough that they get juicy and then the bread soaks up the juice. I occassionaly use bacon fat instead of butter on the bread. Best when paired with cream of tomato soup.
I’ve been watching a few old cooking shows on Netflix lately and on one there was the Kentucky favorite, the Hot Brown. It made my mouth water. They used thick slices of white, crustless bread, sliced turkey, crispy bacon, sliced tomatoes and a cheesy Mornay sauce. It was assembled open faced and put under a broiler until bubbly and golden brown. I’ve never tried one but I really want to now.
