The Prophet Muhammad said that if it fell from the sky, it would fall on the Kaaba. But if the Earth revolves, it would not fall on the Kaaba. It would fall in the ocean or somewhere on dry land. This proves that the Earth is fixed in place.

What scientific studies they did have during that age was for the most part carried on by non-Muslims living in Muslim lands or by Muslims who were more secular than religious.

Technically speaking, by our standards (Christian/classical antiquity philosophical tradition), they don’t do theology at all.
Islamic scholarship is nearly all about textual analysis. If they agree on what the books say, then thats it. Most of the trouble is reconciling different stuff from different books, as they have lots of them, besides the Koran there are the shelf-fuls of Hadiths of varying reputation and the Sunnah. Luckily for them most of the textual analysis job has already been done by a thousand years of religious judging so they mostly don’t have to bother anymore.
To be fair, a lot of Evangelical Christianity just takes a passing glance at theology.
