In New Mexico almost no food, no meal is without the influence of the famous chile pepper. So it should be no surprise that New Mexico claims the invention of the Breakfast Burrito. It is the wrapped wonder that brings spice to the morning. It is now a staple on menus across the Southwest, and showing up frequently on menus nationwide. Even fast food chains now offer versions. Now, to celebrate this success and its New Mexico heritage, we have created the New Mexico True Breakfast Burrito Byway.
Ummmmmm... T+M burritos....
I have gone in there while they are cooking up a batch of chicken fajita mix in the early evening and it smells SO GOOD. I have asked to buy just a bowl of the stuff but they always refuse, saying it is for tomorrow's burritos. But tomorrow, you know it just isn't going to be the same. (sigh)
I was weaned on Breakfast Burritos..... (NOT breakfast tacos!). My personal fave is a chile relleno burrito.
Have you ever heard of The Little Diner in Canutillo?
I was soooo happy to find a huge jar of Hatch NM roasted green chiles (505 brand), at my local Costco! Yum.....green chile is good on just about evertything ;-)
I do corned beef hash in my breakfast burritos instead of hash browns or potatoes. The other ingredients are standard.
