I am taking a picnic Easter lunch to visit our 2 college kids. Menu will be ham, cold chicken, deviled eggs, pasta salad, fruit salad, homemade pound cake, sliced strawberries with whipped cream...
This will result in many left-overs so taking containers to leave it all with them!
We’ve never done this before - kids winding down semester with lots going on this weekend, my foster dog recovering from amputation - don’t want to leave her alone - so we can all be together, eat outside, etc. Praying for a pretty day!

I make them nearly exactly the same way, but use actual sweet pickle relish instead of just the juice. And I have one of those pampered chef decorator things that I use to squirt the filling into the egg halves for a “pretty” touch.

I’m slow...I’ve been using a spoon to get the filling into the eggs. I’ll be squishing this year! hahaha

Barbecued chicken, potato salad, baked beans, & corn on the cob. Lemon-lime Jello cake (some people call it “poke cake”) with lemon Dream Whip frosting for dessert.
(& Russell Stover Easter goodies, olives, & cashews to graze on)

You’re welcome - it was one of the few useful bits of information from one of those endlessly forwarded “try this!” e-mail messages. Oops. “Miracle White” should be “Miracle Whip”!

Mass tonight, eating leftover homemade hot and sour soup I made yesterday. Good Friday fast and church in the afternoon. Saturday not sure maybe leg of lamb on the charcoal rotisserie grill. Sunday we are going to a brunch, where I’ll probably be pretty much be eating shrimp and salmon and maybe a slice of prime rib. Hope all of you have a blessed Easter.

Dinner and Maundy Thursday foot-washing service. Stations of the Cross Tomorrow. Recitation of Genesis Chapter 1 from memory on Saturday evening service and then ringing in the resurrection with bells and flower guild rushing in and dressing the altar for Easter.
Then Easter Service where I will serve as sub-deacon and Mrs. Theknow and I renew our vows after 40 years of marriage followed by ham and lamb at youngest daughter's house with extended family, swimming with grandsons in her pool and shooting water cannons at each other.
And lots of wine!

Forgot to mention, we will be doing an Easter Duckbill Platypus egg hunt. Our oldest girl once asked why we have an Easter Bunny when bunnies do not lay eggs, so I told her it was to divert attention away from the Easter Duckbill Platypus that is the real egg layer.
Surprise Easter gifts have ever since been from "Bill."

My youngest son will be home from college for the weekend. My oldest son, daughter-in-law, sister, brother-in-law any my mom will all be over for ham (and/or meatballs). After church service of course.
I’m somewhere in the house we’ll watch hockey too.
