That’s also the only way you can get it to fry up crispy and still be crispy when it’s time to eat.

Always hated eggplant, thought being purple was God's way of saying: "Do not eat."

After I read your reply I remembered something about how to choose an eggplant so it won't be bitter or have that many seeds. Here's a portion of what I found.

Choose a male eggplant. Males have less seeds, so they will be less bitter.

How to know if your eggplant is male or female? Look at the bottom. If there is a brown circle it is a male. If there is a long brown mark (like a slash) then it is female.

True dat. Unless you get the Chinese variety (the long skinny ones). they're good to go with no bitterness.
