Back to the future. This stuff was happening 30 years ago in the same area.
Some charming little cults and other fun people usually responsible.

This goes on in Dulce, New Mexico, too. It’s not far from San Luis.

This all goes back to the 1950’s when the Eisenhower administration made the deal with the space aliens that if they would share their technology with us, they could mutilate all the cows they pleased.

The dead calves had their skins peeled back and organs cleared from the rib cage. One calf had its tongue removed.
But rancher Manuel Sanchez has found no signs of human attackers, such as footprints or ATV tracks. And there are no signs of an animal attack by a coyote or mountain lion. Usually predators leave pools of blood or drag marks from carrying away the livestock.
I wouldn't doubt it was wolves or coyotes. From what I've read wolves will often team up on prey and have one go for the face and take the tongue out. Other times predators will just rip a belly open, and often times will only eat certain organs.

I’m leaning toward illegals doing this. beef entrails cook real easy and provide good energy.

There was a cult in rural Missouri doing this in the 60’s. Pretty sure they rode into the herd on other cattle, so as not to spook the herd. Used cardboard or plastic sheets to catch the blood and eliminate the evidence of their butchery/sacrifice. Spooked a lot of people, but not really so hard to accomplish.

I'm thinking it's Homo heidelbergensis.
