I did this last year and a lot of good recipes were posted so I thought I'd try it again. Take one and/or leave one!
Thanks, a friend mentioned that to me but I haven’t looked for it. Are you vegetarian and have you tried it? I guess the gravy would be a no/no since it’s made with drippings.

Oh right, I just make a little veggie gravy (using vegetable broth and seasonings)
I was a vegetarian, but not anymore, but kids still are. :)
I forgot to say, yes, we have tried it and like it as a substitute very much. We go to other people’s homes for Thanksgiving most of the time now and the kids just eat everything except the turkey and gravy, it’s no big deal, there’s plenty of food.
To tell you the truth, Mac and cheese is just too much starch in one meal for us. (mashed potatoes, stuffing, etc)

Since it's just Hubby and I at home now, I'm not in the habit of cooking large meals anymore. Boy, when the holiday's come, I'm always scrambling around. This make ahead gravy is wonderful! Takes the "fire drill" effect away! :)
I didn’t mention the “guests” are my college age daughter and one of her out of state friends who needs a place to land for the day. She’s been vegetarian for about 3 years now and I see her moving closer and closer to becoming vegan. She eats a very healthy diet and I have no problems with her choice, but family meal occasions are difficult. Most people don’t really understand the restrictions, and there’s no reason they should. One of my brothers in a good hearted effort to accommodate her always buys a bag of salad mix and thinks she’s good to go!
Vegans are a little more difficult to accommodate. I have the opposite problem. My friends and family are always trying to cook for us, worry that we object to their choices, etc. We don’t! We don’t want to be a problem.
I don’t know where you live in TX, but if you FM me the place, I could find an Adventist Book Center for you and you could get a dinner roast, which is a fake meat turkey roast. It’s good and we love it.
Also, at almost any grocery store, Morning Star Farms sells bacon strips, etc. These are good stop gaps for her in your home. (blt, etc)
Make sure there’s some whole wheat bread in the house. (1st ingredient being whole wheat, not “enriched flour”) and I could send you a great tofu scramble that’s just delicious, for breakfast.

I don’t know if anyone has posted this yet. John Kass from the Chicago Tribune has a brined turkey recipe that is fantastic. I convinced my brother to try it and they turkey was perfect. Better than any I have ever had.

How does a person make a Turkey real spicy.. My wife and tried it buy putting Jalapeno Seasoning but couldn’t taste it..

I did this last weekend for a party, and cooked the bird breast side down...
When I took the foil off to let it brown and get pretty, the bird was still juicy and moist.
Out of a 15 1/2lb bird, we got a quart of meat left!
Beer - proof that G_d loves us and wants us to be happy.
Oh - it also makes a terrific gravy too from the drippings.
