brrrrrrrrr. This global warming really sucks! Six more days and I’ll be counting down to Summer.

Got caught out in a downpour of rain and hail late this am out at Kaiser.

I think I need to fart a stire ... oops... start a fire in the fireplace.

Thank you, JustAmy, that’s lovely.
I also like seeing new people stopping by Amy’s Place, to share in the warmth and friendship here.

Well, we got a pretty good soaking starting early morning into early afternoon. It seems to have let up mid-afternoon. Our low temps were low to mid-40s, and about 60 or so during the day.

You have a most enjoyable day also!

LOL

I wish I had a fireplace!
My toes have felt frozen all day.

We had weather alerts this afternoon.
Warnings for thunderstorms with heavy rain and hail.
We got some rain last night but only showers today.

I think it is referring to cake four, our fine regular sugar..and paper liners?..Those are English terms from across the pond.

Okay, again.....Meg, is that a typo, 'cause I REALLY don't know what cake four is - I know what cake "flour" is.

And LOL, Amy at putting you to work. thank you all for the lesson in English terms - I understand 'merican cooking terms so much better. :)

Hi, Dita! I’ll be glad to tell you how I do them. Let me finish dinner and I’ll be back - we always called them “baked potatoes on the half shell”, but they are actually twice-baked potatoes.

I’ll be back!

Thanks Amy and yes, we gave them a bit of traffic for sure!
I did think that was funny. Your post wasn’t there until I checked for mine and there it was. (Beat me by a nose)...

I will try to get online in a minute for my doc’s report, after I put away 10 bags of groceries (little plastic bags of course) but heavy they were.

How little she was then! My, how time flies, doesn’t it Amy? She was so precious in the snow.

I explained to my doctor that I felt so bad, I didn’t feel like walking in the house, much less do the thousand things I needed to do during the next few days. They don’t like to give too many antibiotics and I had finished one round and felt worse.

I explained my nose and head was so dried out and he called it a type of rhinitis. To beat it all, he said he had just gotten over the same thing and it took him 2 and 1/2 weeks to get better. He said his symptoms were the same as mine, tired, sleepy, no energy, so I at least had that on my side.

He prescribed a steroid type nose spray for me and when I got home and used it, I got some relief. It opened up my sinuses and after they started to drain, I took a nap and when I got up, I decided that I would go to the store. Now I know all my energy will not rush back in one day but I feel a little better. Maybe I can accomplish a few things each day and be able to make it....I sure hope so. Thanks for your concern, ya’ll.

Now I am waiting for the twice baked potatoes recipe. I have eaten them somewhere but have never made them.

I misunderstood and thought you were under the CA snow and she got her wish. She's probably still too young to drive to the mountains. ;-}

Billie, please tell me how you do “twice-baked” potatoes; they sound so good!!

They're sooooo good. :) We have them for dinner every Christmas, and I usually will make them whenever we have a dinner party.

I won't go into detail about how to bake potatoes lol - except to say that I always scrub them before baking 'cause most people like to eat the whole thing. :) Also, since you'll need to cut them in half (with a very sharp knife so they don't tear) when they're done, be sure to rub the outside of the potato with Crisco before wrapping them in foil to bake. That way, the skin doesn't dry out and will cut easier so you can scoop out the potato.

Dita, we usually have 12 for dinner, and I'll bake at least 15 - 18 potatoes - for the big eaters and to also have some leftover for another night.

When done, cut each potato in half length-wise, and set aside the 'shell' to fill when the insides are all mashed.

I mash with (real)butter, sour cream, salt, pepper, garlic powder, onion powder (some use chives or chopped green onion tops, but I don't.), and parsley flakes. You may need to add a little milk - depends on the consistency you like, and how much butter and sour cream you have used already. Taste and adjust is the only way I can do it!

I put the empty potato shells on a cookie sheet, and then refill them with the mashed potatoes. Usually I end up with an extra potato shell or two because I'm generous in filling them. Put a half pat of butter in the middle of each filled potato half, sprinkle a little more parsley flakes, some paprika and a bit of grated cheese if you like.

I put the cookie sheet in the freezer without covering until they freeze solid, so the pretty stuff you put on top of each potato doesn't stick to the foil.

When I'm ready to bake them for our dinner, it takes well over an hour at 350 degrees to heat them through, so I usually take them out of freezer and leave on counter for an hour or so before baking.
