If you are like many folks the day after Thanksgiving, there is a large amount of leftovers. Though our family has its favorites, it would be fun to find out how others create their after-Thanksgiving masterpieces.
So, what do you do with the: turkey, giblet gravy, mashed potatoes, stuffing, cornbread, sweet potatoes, cranberries, etc?
Here is the turkey pie recipe: Our family favorite
Cut up the dressing and turkey into bite size pieces, starting with a layer of turkey, layer of dressing, another layer of turkey, another layer of dressing, etc. I usually put it into a bowl or deep round casserole dish.
Fill the bowl with the layers, then pour gravy (warmed up so it pours better) over the top, and using a spoon make dents into the layers so that the gravy runs down into the layers. Then warm up the mashed potatoes and make patties and cover the top of the casserole dish. Top with paprika and/or butter to make a crusty top.
Bake at 350 for 1 hour, let it rest for 15 minutes and it is ready to eat. I usually cover it with foil for about 1/2 hour and then uncover for the rest of the baking time.

Unroll a tube of Pillsbury Crescent Roll dough and separate perforations not ito the triangle shape as the directions give, but a square shape using two triangles together. Mix chopped turkey, some cream cheese and peas. Put a heaping tablespoon size on to the dough and fold over and pinch edges together. Bake at 375 until nicely browned. Kids love this.
Its funny, the kids say it has to be MY stuffing. Yet years ago one complained about the celery, another about the onions. So I sliced two pieces of stuffing bread and sprinkled them liberally with poultry seasoning and handed them to the whiners.
No more complaints. ;)

Mix the turkey, vegis and gravey in a pan and cook for a few minutes then pour into a cooking dish. Pour over bisquick mix the same consistancy as pancake batter and cook at 400 for an hour until golden brown. Delicious.

I always just keep eating leftovers cold or heating them up just like they are. I was going to say stuffing is my favorite but then there’s yams and everything else, too...
This is my first Thanksgiving with insulin treated diabetes. I should have never read this thread..... the ideas in these posts are driving me up the wall.
I am tempted to let my blood sugar jump to the roof and eat every single one of these wonderful suggestions.

There has to be corn. And mashed potatoes, rolls, pumpernickle bread, turkey, gravy, stuffing, sweet potatoes with marshmallows, stuffing, squash, broccoli and cheese casserole and did I mention stuffing?
And then there is the desserts.
Excuse me while I hit the fridge again.
HOT TURKEY SALAD
4 cups cubed cooked turkey
2 cups diced celery
1 cup slivered almonds or cashews, toasted
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1-1/2 cups mayonnaise or half may, half sour cream
1 cup (4 ounces) shredded cheddar cheese
1 cup crushed potato chips I use honey mustard
Directions:
In a greased 2-qt. baking dish, combine the first eight ingredients. Top with potato chips.
Bake, uncovered, at 450° for 15 minutes or until bubbly. Yield: 4-6 servings.

Turkey Pilaf is a winner at our house.
From memory, so you takes your chances....
melt 1 stick of butter and saute 2 C rice until golden brown. Add a generous amount of curry and thyme (you can adjust it to taste at the end). Stir in 4 C turkey stock, 2 cups leftover turkey and a can of sliced water chestnuts. Cook, stirring occasionally until rice is tender. Taste for salt (and curry and thyme) and stir in a handful of chopped parsley. It is very rich, and very yummy. Serve with a plain veggie or tomato juice.
I saved some dressing and gravy and had it for breakfast this morning. If that turkey wasn't so much work, we would have it a little more often. My brine this year worked like a charm.
Hang on for a while, it’s got thousands of ingredients. I have to get most of my kids to bed first!
Turkey Pot pie is always the best at our house and also the turkey soup. We put almost everything in the pie,in small chunks. Turkey, dressing, mashed potatoes, fresh mushroom chunks, onions, corn, peas, carrots, and then some leftover gravy. I always make extra gravy so I will have some for the pies. I also use a deep dish round cake pan instead of a pie plate.
