Recipes Needed (Vanity)

I have grown tired of cooking (and eating) the same meals over & over again. Mostly we eat steak, beef ribs, fried chicken, fried pork chops, tacos, and enchiladas. With the occasional corned beef, spaghetti and (packaged) Chinese food thrown in.

I have several cookbooks upstairs that I was considering perusing, then I thought about the fine folks on FR.

Please add your favorite recipe(s) to this thread so I can start experimenting. The only thing that I will not cook is liver & onions (YUK). I would love to have a tried & true recipe of pot roast and (not-packaged) Chinese food ~ these two things, along with homemade biscuits, have forever rejected me.

I don’t have an aversion to baked stuff ~ it just has not been in my repertoire.

Also keep in mind, we do not have immediate access to fresh seafood.

Thanks for the buttermilk pie recipe.

I bought a buttermilk pie from a churchlady at a church bake sale a while ago and we really enjoyed it. She was about 90 years old, so it must be a good oldfashioned country recipe.

My best cookbooks are those that are made up of tried and true churchlady recipes and sold at their fundraisers.

This recipe has been in my family for generations.

It is very important to sift the flour & sugar, otherwise the pie will not set ~ you will end up with buttermilk pie soup!

Thanks. And I am interested in that enchilada recipe. Is that the one you posted earlier? My sister is the current family enchilada champ . . . if I knock her off that perch I will rule every category except pastry.

The enchilada recipe (posted in #279) is awesome and dangerous (it is so good you don’t want to stop eating!) Give it a try, perfect it, then blow your sister out of the water. ;-)

Also give the buttermilk pie a try ~ it is sweet heaven.

Seriously awesome enchilada! Not that sissy stiff they sell in TexMex restaurants.

This is the real deal! and the egg (over easy and runny yolk, what I call a “dippy egg”) is what sets this dish off!

BTW, what kind of recipes are you looking for?
Do you like ethnic food?

A few years ago I was talking to the insurance agent that covers my church. He told me that the most common law suit against a church was copyright infringement involving cookbooks sold by churches as fund raisers. Many people turn in recipes from cookbooks, some not knowing moms pie was copied from a book. I seldom use a recipe when cooking because the word’s spelling makes no since to me and I had a hard time spelling it as a kid.
