I don't know if you can find green papayas there, but nothing is a better tenderizer than grated green papaya in the BBQ sauce. Does the trick and doesn't impart any noticeable flavor.

Thank you all for all the kind words, and, yes bob, gas grills are great for the quick steak and burgers, but, ya needs to get a wood burner for the ribs and brisket. Speaking of ribs, I will be doing a special on those later on this month or the first part of December.

Haven’t ever tried papaya. Used to cook several brisket on the pit for large parties.
After so many hours I would wrap each in heavy duty foil and let them sit on the grill for another hour or so. Always had the best brisket, people raved.

Never stand in the way of success...but green papaya is a great tenderizer. Don't pick up a ripe papaya because the sugars will flavor the meat.
Over here we use green papaya as a vegetable too in a chicken soup called Tinola by the Filipinos. Cheap, quick to fix and tasty.
Anyone up for an easy Kalua pig method?

We used to wrap fish in banana leaves and bury them in beach sand and build a fire over them
