I'm in an argument with liberal co-workers on the merits of gun ownership.
They are claiming that there are few (if any) examples of where civilians (not police officers or security guards) came to the publics defense.
We are talking about malls, universities, restaurants, etc., not private residence.
I'm sure there was an incident at restaurant a few years ago, but can't find a link.

I would check the NRA website. They have a column called “the armed citizen” in their magazine and it complies stories exactly like the type you are looking for. The columns may be on line.
Find any book by John Lott and you will have ample examples of the information you seek.

there was an incident a few years ago at a restaurant in florida that had a “seniors” breakfast once a week or so. some bad guy came in to rob the place thinkin there’d be tons of cash. he was met by two elderly retired gentlemen who proceeded to introduce the bad guy to a bad case of lead poisoning. I think it was a Denny’s or IHOP..
The NRA always has a page or two in their monthly magazine of dozens of citizens protecting themselves with a gun
Shortly after NM introduced concealed carry, a 70-something citizen came to the defense of a woman working at Walmart who was being stabbed and slashed (at the store) by her ex-husband. He shot and killed the ex, saving the woman’s life. The Sheriff declared it a righteous shoot, as did the Chief of Police.
What are the evils of gun ownership?
That they may later use those guns to commit a crime (murder, robbery, suicide)? Would they be able to commit the same crime without a gun? Could they conceivably rob a store/person with a finger in a coat pocket?
Or is (s)he concerned about accidently discharging the gun or having it misued by a child? Or stolen during a burglary and used by a criminal who “would not be able to get a gun otherwise”?

The school shooting in Pearl MS a few years ago was stopped by a vice-principal running to his truck, getting out his .45 pistol (which at the time was not actually legal for him to have on campus), loading it, and then using it to prevent the shooter from doing any more damage.
