Happy Thanksgiving! Got Leftovers???

Only in a great country like ours can we enjoy the blessings of freedom, prosperity, abundance, and still have leftovers... LOL
If your home is anything like ours, can you eat all day, and into the night, leave a tidy some of food, (like that G'dawful gooey cranberry stuff) and still have more food than what you had before you started. Look at your refrigerator, is it any room left... well is there??? LOL
Here are some suggestions for that Turkey and trimmings that are still around!.....

Another egg plant recipe:
Apply olive oil liberally to coat 2 cookie sheets,
Slice two medium eps into about 1/2 inch slices,
dip slices into beaten egg with with a little H2O and salt and pepper,
dredge in bread crumbs seasoned with salt(I like black lava salt) and pepper and only just a pinch of Italian seasoning(optional),
One sheet of slices dip and dredge once, the second sheet dip and dredge them twice,
liberally sprinkle olive oil on the tops of the dredged slices and bake them in the oven on 325 until golden brown,
to a large can of tomato puree add about a tsp or so of brown sugar and stir as well as taste to see if it needs salt, apply some on the bottom of a large lasagna pan, apply a nice amount of really good basil(I get mine from The Milwaukee Spice House which you can order over the net as they have the best spices I have ever found) onto the the puree.
Put the layer of once dipped and dredged sliced ep covering well,
spread some more puree over the ep and put basil on this layer too,
distribute about a pound of mozzarella cheese sliced as the next layer,
spread some tomato sauce from a large can flavored with a little brown sugar and salt to taste over the cheese with basil also on this layer,
put your second layer of twice dipped ep and put sauce and basil on this layer also,
put another pound of sliced mozzarella on this layer and spread some more sauce and basil over the cheese and bake for about hour or until bubbly hot.
Don't ask me why but the egg plant, tomato and basil together have a real draw. If you have any left over sauce you add a little garlic, pepper and milk to make a cup or bowl of homemade tomato soup. Just warm it up in the microwave.

You forgot to tell them how good really buttery/garlicky toasted bread with Parmesan cheese is with this dish. As you told me the garlic bread really sets this dish off nicely because there is no garlic in the eggplant Parmesan recipe. Just a nice amount of great tasting/fresh or fresh dried basil.

I made your bread pudding recipe and it was fabulous! Only thing is that I put it in a souffle dish and it took 3 hours to bake. My friend from England came over that evening and she told me to put foil on top of the pudding with a hole in the middle and it would draw the heat into the center and help it cook all the way through. It worked. I made the caramel sauce too. Pauline said it was the best bread pudding she ever had. Her mother was a cook in England and made bread pudding often but nothing like this recipe. Thanks for such a great recipe. Next time I will put it in a bigger dish. :)

Before you go off on a pompous tangent you might want to realise that I'm a vegetarian for health reasons - my family has all sorts of genetic timebombs from diabetes to heart disease. The vegetarian diet, as such, helps me and suits me. It's not for everyone, nor am I saying it's for everyone. This is a less arrogant position than you telling me that I have to eat meat.

Carlo, we never go out to eat except rarely, so we went out to an expensive restaurant tonight. It was great as I didn't have to load dinner pots, pans and dishes into the dw!

However, we prefer making our own food at home, even if it's the most expensive restaurant! We're great gourmet cooks (as I know you are!!)

Now that we moved I make my own sourdough bread! I'll have to talk to you about that (if you're into sourdough bread that is).

Ivan! I'm a vegetarian too! DH is not! And we're GOURMET COOKS (but not professionals, like Carlo).

How about a Quorn Roast that you put in a browing bag and cook in the oven, and be sure you put in some spices with it.

Serve it with garlic mashed potatoes, lingonberries, mmmmm. It's delicious!!!

DH (remember he's from the UK) loves Quorn and got me into it and away from tofu (though I still love tofu, he hates it), and he's a meat eater who adores Quorn. From what I understand in the UK many meat eaters also are huge fans of Quorn.

The Turkey Sandwiches sound good. Around here its 2 pieces of bread, some mayo, a piece of cheese and a piece of turkey. We have gone to wheat, light mayo and FF cheese though:')

Good Morning Carlo. Almost 6AM here behind the Redwood Curtain and I slept like a fat turkey. I have a question I should have asked 24 hours ago. How do you avoid eating too much dip and chips, salami, cheese, crackers, olives etc before dinner???

We had dinner at 2:00 and hot turkey sandwiches with stuffing, cranberry relish and gravy at 7:30.

Oh man -- I just saw a little segment on using leftovers on TV. They took jellied cranberries and put it inside a very thick slice of Texas toast, dipped it in a mixture of eggs, cinnamon, brown sugar, milk and orange juice and then made french toast. That got the old mouth watering!! :-)

There is an indian dish, the local name I don't remember, but the translation is "The Priest Fainted." It is eggplant and basil and tomato. A great combination in lots of locations!
