I love Les with his play by play of the turkeys hitting the ground. Classic TV.
We cook the bird in a pyrex roaster, so it gets steamed pretty good thru-and-thru. Then take off the lid for about 15 minutes and broil it for that browning thing.........
What kind of dressing/stuffing do you make?
The standard Better Homes And Gardens Recipe for cornbread stuffing (old cookbook, circa 1985).........with all the giblets cooked, chopped and added. Even buy extra giblets and add themm, too, and to make a big pot of giblet gravy..............
Have you ever noticed that people from The South generally refer to it as "dressing" and people from the north, refer to it as stuffing?..............
Oh, good idea - extra giblets ... mmmm. Ah lubs me dem giblets!
Ha, yes! That's why I added "stuffing" after I wrote the question. Some people think I'm talking about Miracle Whip!
In addition to the giblets that comes with the turkey, we buy maybe 3 tubs of chicken livers and a pound of gizzards/hearts and cook them in the pressure cooker (with onion, celery, herbs, etc) till they are very, very tender (about an hour after the pressure starts). Drain & strain, chop up in the food processor, add half to the dressing, other half to make the gravy..............
When I was in the Marine Corps (70's) the boys from up north didn't know what I was talking about when I'd say we're having "Turkey and dressing" at the chow hall on Thanksgiving. "You mean we gotta dress up on Thanksgiving?"..............
That's a great tip - I'll keep that in mind. Dressing always needs more meat pieces, IMO.
I also like to put sliced hard-boiled eggs in my giblet gravy, if I'm in the mood and have my mouth set for them.

We need to give Mo1 some ideas for stuffing that 24-lb turkey. Think I'll do a Forrest Gump - Bubba's Shrimp type list. Every kind of dressing I can think of to suggest, then we can do recipes for the top pickin's ...
