Well, one way to freak out your cat is to stare at it with a fixed interested stare.
Cats, being predators, take a fixed stare as a trheat.
Usually, sincec they 'know' you to be one of their 'clan', they will trill and run up to you to see if you are okay.
Or they'll thrash their tail and charge.

More like a bluff charge, measuring you sorta.
Checking to see if you're serious.
Of course, I tend to grab the kitty and give them scritches, totally confusing the cat further.

When/if you repeat this, do they remember what happened?

Oddly, no.
Cats are sometimes totally instinctual in their reactions.
They do remember stuff, but instinct tells them there is a -=Threat=- there.
So they act on the info.
(My previous cat, the bobcat domestic mix, was famous for doing bluff charges and snorting for show.)
