Here's another quick meal for one when you're in a hurry.

* One small can chrushed or chunk pineapple in its own juice
* Pour into cereal bowl
* Add some flaked coconut
* Add some chopped walnuts
* Splenda or other sweetener to taste, if desired
* Mix and enjoy.

A Tuna Salad Sandwich is always good, but it takes five minutes to make:

* one small can tuna, drained
* put into bowl
* add chopped sweet pickles, OR, finely chopped onion
* add some Mayonnaise
* mix everything, then serve on lettuce, or make a sandwich with your choice of bread

Texas toast is like regular sliced bread but sliced thicker. I think it's probably made of the same stuff, maybe not, seems slightly chewier. I used to buy Texas toast, it's been years. Now that you mention it, I don't remember seeing it on the shelves lately but it is there obviously since Lucy's been using it.

I have had it inadvertantly since I use a bread machine.

You know, I just never create meals for myself these days. Silly but I haven't had a real tuna sandwich in years. I have however been known to eat tuna right out of the can!

I had never heard of it,not as that means a whole lot.
I am sure there are a lot of things from the other NY at the opposite end of the Hudson that I have never heard of.
Probably just as well about that for the most part.

Here's more than we ever wanted to know about Texas Toast:
This is an exact quote:
Texas Toast

"Toast made with very thick, very airy bread so as to make an extremely light and crisp toast. Texas toast is sometimes served in steak restaurants as an alternative to a roll.

"Texas toast is also used in the form of two rounds with various fillings to make breakfast and other hamburger-like sandwiches in some fast food chains, particularly Hardee's. Bread for making Texas toast can be purchased in supermarkets.

"One recipe for Texas toast says it is made by brushing each side of slices of French bread with Olive oil and cooking as per normal toast. Another recipe uses a mixture of eggs, milk, cinnamon and vanilla instead. Yet another recipe uses a mixture of cheese, butter or margarine, pepper, and mustard. "

"Michelle Gillie kindly sent me the following comments:

"Texas toast is thickly sliced white bread, brushed with butter or oil, and grilled. The butter or oil is sometimes flavoured with various herbs and spices. It's nothing at all like French toast, which in its simplest form is prepared by dipping slices of bread into an egg and milk mixture before frying them.

"French toast is most often eaten for breakfast and is usually served with butter and maple syrup, powdered sugar, or jam. An online culinary dictionary that I often use says that in England, French toast is called "poor knights of Windsor." I have no idea if that's an accurate statement."

Well this is interesting, I was just reading about tornadoes in Iowa and now our tornado sirens are going off. Uh oh, better check the weather!

The sirens have stopped, turned the tv on, looks like it's just hitting our area. Appears to be worse south of here. I can hear the thunder but it's off in the distance. We had storms earlier but they were nice storms, a little rain, a little thunder.
