I think I'm definitely going to make bread of some sort while Jen is gone.

I'm actually thinking about making up a big batch of dough and dividing it into small amounts to freeze. Then I could just make one or two rolls at a time and won't be tempted to eat a whole bunch. Could take a package out before I go to bed and make myself a little loaf to have for breakfast.

That is what I was thinking! I coulda formed, then froze two of these pans of rolls...Steve and I don't eat that much bread.

But the boys are gonna love this!

Have you frozen dough before? Since we went through so much bread at home, we never bothered with it...

I'm wondering if I should make loaves and let them rise and THEN freeze, or thaw and allow to rise, or what. And though I'm assuming overnight would be enough for a small amount to thaw, I don't actually know.

Am sitting here thinking about everything I need to do... need to refill my washer fluid... get gas... I already printed off my flight info and directions to the cheap lot... guess I'll leave somewhere around 5 am. Hope I don't wake up the cats.

Frozen bread in the store is frozen prior to rising...I don't know if it's essential, but that's how they do it.

I figure you could take it out of the freezer the night before, stick it in the oven with the light on to warm things up a bit, then just bake them the next morning...

Hmm...I'll read up and experiment and let you know!

I went to Canada last month (Saskatchewan)

It was the first time since 1999 that I was on a plane.

I bet that'd do it. So...probably I should at least sort of shape them...just into balls or kind of oval shapes. So that when they rise, it's more or less in a small loaf or roll shape.

I think this could work...

My flight's at nine-thirty. So if I'm not AT the airport by 6:30 I'll get nervous. I know, it's stupid, but that's me. So I'll be leaving fiveish.

Thanks Pip! I kind of like flying. Have done more in the last eighteen months than in all the time before that... of course, before that my flying had been limited to two trips to Hawaii. Since then I've been to Florida once, and then the PA-CO thing... let's see... once to visit, once to find my apartment, and then last Christmas. So this will make five trips in eighteen months.
