I agree with you about eating eggs from chickens that are just running around. I know the farmer. The eggs taste much better, too.

[ When I was in nursing school in the 60s, my nutrition professor, whose book is the best I’ve ever read stated that females needed 53-55 grams (not mgs) of fat each day to prevent breakdown of the fatty lining that protects nerves and muscles, and helps brain message conduction, etc. while males needed 56-59 gms. At that time the FDA was saying that butter, eggs and other great fats (bacon, etc.) were bad for you...and other such nonsense. This is still ingrained in peoples’ heads to some degree. My cholesterol levels are high but my arteries are clear and the tests always state that my numbers are due to hereditary genetic makeup and not to diet. I’m not worried about my numbers. ]

Sam, I have raised egglaying and meat chickens for over 30 years on and off.
Of course you can eat a fertilized egg. There are no little developing chickens in there. fertilized eggs do not develop until the hen is ready to set, or until they are put into a brooder.
There is nothing like fresh chicken eggs. We have 15 hens and a rooster that have a half acre to run around and do chickeny things. In the winter when they slow down we have to supplement with store eggs sometimes. They are almost tasteless to me.
Put a lantern out on the ground, the hens will stay up late and gorge on the bugs the light attracts...

I love to do deviled eggs. Learned here how the secret to effortless shelling was to drop the eggs into boiling water.
Besides that the egg whites do have carbs the yolks don't.

If I were stranded on a desert island and I had to pick only two foods to sustain me, I would have eggs and milk. Both are power packed with nutrients and they are both delicious.

Anyway, I love eggs and by my reckoning I've eaten about 50,000 of them over my lifetime (so far).
