Cicada recipes: How to cook these once every 17 years delicacies

The 17-year cicadas have started to emerge from their underground homes and, soon, Northeast Ohio will be crawling with literally billions of these bugs.

While snacking on a cicada may not be your idea of a delicious treat, they're high in protein, low-fat, low-carb, gluten-free and, over the course of the next several weeks, will be plentiful and fairly easy to forage. The clock is ticking, though.

Jenna Jadin, an entomologist who wrote "Cicada-Licious," the definitive cicada cookbook in 2004, says the bugs are best to eat shortly after they've hatched, before their exoskeletons have hardened. Early morning is the ideal time to catch them. Cicadas with hardened shells should be boiled before eating. Never forage cicadas that are already dead.

So, how do they taste? Bon Appetit says cicadas are similar to soft-shell crab, "but with subtle overtones of boiled peanuts, the kind only a backroads gas station can really do right."

Crispy wok tossed cicadas

Ingredients:

2 cups cicadas 2 tablespoons peanut oil 2 tablespoons minced ginger 1 hot dried Asian chile 4 tablespoons minced lemongrass 1 cup chopped scallions 1 clove minced garlic 2 tablespoons sugar 2 tablespoons Toban Djan (fermented bean paste with chiles) 1 cup minced celery 2 tablespoons soy sauce 1 teaspoon corn starch 3 tablespoons rice wine (or sake)

One of the absolute worst tasting foods I have ever put into my mouth, it was boiled peanuts.

Funny, we are the land of plenty, we have almost anything in the world to eat but yet there are those in the country that want us to resort to eating bugs. No thanks. Insects, its whats for dinner....in 3rd world craphole countries. Just where the left wants us to go.

We had a Dachshund. He feasted on cicadas. Not any ol’ bug, but they had to be at that right stage, where they were still alive, but flopping and crawling on the ground, not buzzing about. He was a finicky eater of ground bugs. Once we went to the lake to fish, and he targeted every dying cicada he could reach within his leash’s limit. I guess it was the fact that they were still crunchy on the outside and still squishy on the inside. He had an aversion to his snack flying around the inside of his mouth and I guess a dead one tasted just like, well, a dead bug. More than once he’d come staggering back to us with his belly hanging low to the ground. I can dig the boiled peanut analogy - they’re addictive.

I have lived and worked on all continents of the world except Australia and Antarctica searching for oil. I have ate a lot of strange stuff. I have not tried bugs yet but would.

If they tasted good what the hell, put them on the menu. I grew up in West Texas and South Louisiana.

You would be surprised what we ate in South Louisiana. If it tasted good and would not kill you we ate it. The swamp was an absolute paradise for a young kid growing up. It taught you much about food and survival. That swamp would feed you. If you were not a swamp rat it could kill you.

Most fear the alligator. It is the Water Moccasin that will get you.
