I did something like this with a pork roast. Slow roasted it until it was falling apart, then shredded it and then finished it off in a cast iron skillet. Then put it in flour tortillas with frijoles and fried onions and peppers.

I make a Yucatán pork dish called cochinita pibil using achiote paste. Great tacos. I’ll have to try it on some smoked meats.

I have used it... It is good...
I make a marinate out of: Some of the pastes, olive oil, garlic, black pepper and lime use, blend in blender and brush on chicken and cook...

When I grill I add pistachio shells to the fire. It really adds a nice flavor.
