This video highlights a hunter not being careful while dressing this bull elk. Tip is, always guide the blade with your fingers so as to push the gut bag away, and make sure that the knife point isn't close to the bag. Anyone have this problem or accident before? Watch the video here.

No kidding. Usually it’s just gas, but it is really vomit-inducingly putrid. That guy suffered.
I use hooked blade (Wyoming knife) and start my cut from the spine. It’s faster less messy and keeps me away from potentially puncturing the icky parts.

Anybody who has ever been involved with dressing out a cattle or swine carcass soon learns some very vital lessons about gutting, most of which include the admonition that the “offal” is pretty aptly named.
Home slaughter and dressing out of domestic animals is an art pretty much lost in America today, which is perhaps something of either a blessing or an abstract loss, depending on how one views these things. All ruminant animals have this huge “gut bag”, filled with fermentation bacteria that live in anaerobic conditions, and generate a great deal of methane among other byproducts, especially dimethyl sulfide (the odorant in natural gas) and other mercaptans. There is no easy way to dispose of this sometimes massive part of the internal workings of the carcass, except perhaps by interment. Have a disposal pit dug nearby, if possible. If not, have some hogs nearby to work on it.
Oh God... burn those clothes and wash yourself in gasoline and turpentine.
I have learned to make every effort to stay far way from that for any animal I dress.

Thank goodness Dad taught my Bro and I the proper way to field dress critters back in our single digit years. All the way up to Roosevelt elk in the backcountry of Oregon.

I remember the first deer I killed. Got it back to the cabin, dressing it out under the back porch light. Knife in one hand and an Outdoor Life article in the other hand. I do recall them making a BIG DEAL about staying away from the intestinal parts. I also recall not liking the taste of the heart at all!

I think the article said to soak it in salt water, and then I probably just fried it or something. It’s been 40 years now.... I do like the liver though!
Correct. Gets the blood out. Boil, Cut in small chunks length-wise, put in a big jar with onions, peppers (I like chunks of jabaneros or ghosts) and vinegar. Really good. My family throws in a small amount of sugar.
