Whoa - 2 cups of mayo?! Just put enough so that it’s moist to your taste, I’m pretty sure that won’t be 2 cups worth.

I always look at the recipe when you post, but I have to say that this site has the most fat-laden recipes I’ve seen in a long time. The general ideas seem ok, but they could all use a little lighter hand with the fat.

Cut out the pineapple and use red grapes sliced in half. Delicious! Also, sounds like too much mayo—just need enough to moisten everything.

I have a simple chicken salad recipe - use whatever cooked chicken you have - or boil in chicken broth with a couple stalks of celery or even just the leaves - when it is done chop then run through a food processor to get a fine crumble. set aside.

Mix equal parts sour cream and mayo - add celery salt to taste - then mix in a couple of stalks of fresh celery chopped fine and the chicken.

If you need more moisture, mix a little more of the mayo/sour cream mixture.

This is the basic recipe and is wonderful like this - or you can add chopped nuts, dried cranberries, grapes - anything you like in a salad.

OK, I'll play.

Curried Chicken Salad

Two cups chicken breast, preferably poached
Quarter cup of chopped celery
Half cup of seedless grape, sliced in half
The best mayo you can manage
Curry powder to taste

Not chicken salad, but what's in my oven cooking for dinner right now

Lobster mac and cheese

Big Y sells frozen lobster & I always watch for the buy 1 get 2 free sales. Rich as heck, but I wanted to let my husband know I love him & to make up for being cranky (Fractured my ankle & foot, I'm not happy when I'm forced to stay off my feet for a few days)

My chicken salad - not pineapple, but apples or red grapes (also have added chopped dried apricots, hate raisens, but you may like them), celery, onion, touch of mayo & a light sprinkle of poppy-seeds & of course, salt & fresh ground pepper

My chicken salad:

cubed or shredded chicken
a couple diced apples with or without skin
raisans
walnuts
celery
mayo (easy on the mayo)

if you like curry, a little curry gives it a nice flavor

Great as a wrap.

For anyone in the Raleigh area, Tookies has the best chicken salad. Look them up, there are 3 of them I believe.

I keep a little known herb in my garden called lovage. It tastes like celery (most “celery seeds” you buy are lovage seeds). Chop some up and put them in there (without the pineapple) and now we’re talking. It’s also good in soup when you’re out of celery. And it’s a perennial.

I like any amount of chicken you happen to have around, finely chopped, red onion finely chopped to taste, mayo (best foods preferably) to moisten, and Pappy’s Seasoning to taste. I never measure anything. Serve on white Rainbo bread toasted.
